This is where Fabien brings his harvest. The grapes are destemmed and then placed in vats to begin fermentation and maceration for approximately 20 days.
The white wine is aged on its lees for 6 months, the entry-level reds are aged in concrete tanks for 6 to 12 months, and finally, the top-of-the-range wines are aged in 225-liter barrels for 18 months.
